Enjoy the fall season at Oliver Royale
It’s officially fall in Knoxville and it is one of our favorite seasons at Oliver Royale. Not only are there tons of seasonal produce to choose from while creating our new menu, but we’re also filling your calendar with events that you won’t want to miss!
Read on to learn where the inspiration for our new fall menu came from, as well as Chef Darin’s favorite dish recommendations to try at your next visit.
The Fall Menu Inspiration
This year’s menu is inspired by all things fall, nature and a fishing trip Chef Darin took to the Smoky Mountains last month! With a true fall scenic backdrop, leaves starting to turn, and temperatures cooling down, this Tennessee landmark got Chef Darin thinking of sweet potatoes, butternut squash parsnips and all the wonderful root vegetables that fall brings.
Each year, we push the limits of our creativity from flavor profiles, to unique twists on classics and unexpected pairings, and this year is no exception. If you’re a fan of game meats, get ready! Our fall menu features rabbit, duck, and venison - which Chef Darin is very excited about!
We love supporting local businesses and that includes partnerships we have with local farms and farmer’s markets for our seasonal produce. We want to give a shoutout to our new local partnership with Zavels Farm, L&C Farms and Hudson Farm
Chef Recommended Fall Favorite Dishes
Pan Seared Scallops
Served in a roasted mini pumpkin with butternut + pumpkin risotto, fried sage, and a citrus brown butter sauce. This starter pairs great with the perfect fall drink off our menu - Salvia Hexia. This drink is made with Castle + Key Harvest Gin, pumpkin sage syrup, lemon and cynar.
Double Bone-in Venison Chop
This entree is served with a sweet potato au gratin, gruyere cheese, roasted cauliflower, apricot agrodolce and sweet potato gaufrettes. This entree pairs perfectly with Septimus Smith. A sweet potato whiskey made with averna, arancia and carpano antica.
Roasted Beets & Blue Cheese Salad
If you are in the mood for something light, this one is a must! This salad is served with gorgonzola, confit baby carrots, crispy farro, candied walnuts, arugula, dried cranberries, and local honey vinaigrette. Need a drink recommendation? We got you! This salad pairs perfectly with “What's Up Doc?” A brown butter reposado with carrot juice, lemon, agave and allspice dram.
